| TSC: Chicken Yogurt and Veggies Pita
Hello everyone!
This is my first and foremost entry for this blog (and 2014!). I’ve been asked by many to share my recipes — so I thought “Why not?”.
Onto the recipe:
This serves 3 - 4 people.
This will take 30 - 45 mins to prep and cook. Excluding the time taken to marinate the chicken. 4 pocket pita bread. Mine was from Tesco, best invention evar. The chicken + marinade ingredients: 2 medium sized breast chicken fillet 5 tbsp. of Natural flavored yogurt 2 red chilies, chopped 1 1/2 clove of garlic 1 1/2 shallot The veggies: White mushroom (roughly chopped, approx. 1 cup - but really depending on how much you love mushroom in your pita. :) ) 1 yellow onion, chopped 1 handful of cherry tomatoes, halves 2 tbsp salted butter Any leafy veggies (ohmygod I suck at naming things? Hahaha I usually use iceberg lettuce or butter head) - Around 1 - 1.5 cup, shredded To taste (Optional): Mustard/Cajun pepper/pepper What you need to do: 1) Blend all the ingredients for chicken EXCEPT the chicken of course ;p 2) Marinate the chicken for 30 minutes using the blended ingredients — pop it in the fridge. 3) While waiting for the chicken, warm up your rice cooker for about 5 - 7 mins and melt the butter. 4) Put in the chopped yellow onion and sautee until translucent; at this point you should be able to sniff the heavenly smell of the onion. 5) Continue with the mushroom and sautee till it turns brownish 6) Add in cherry tomatoes. Close the lid for 2 mins. 7) While waiting for the cherry tomatoes and mushroom, bring your electric grill to the maximum heat. 8) Take out the chicken, and start grilling. 3 - 4 minutes each side depending on how thick your fillet is. (Uh oh! Don’t forget your mushroom and tomatoes! They should be ready by now!) 8 a) ****Optional: You can toast your pita using the grill too, if you like. 9) Cut your fillet into small cubes - this is to ensure that we can fill the pita with as much chicken meats as possible 10) Mix your chicken, mushroom and tomatoes in a bowl, season with cajun pepper 11) Time to fill in your pita!, start with the leafy veggies as the base, then the chicken mushroom mix. 12) Top it of with mustard, as per shown in picture, et voila! |
